Meet Captain Amylase. He (or she) works in the brewer’s mash tun and has a very important job to do. Amylase is a naturally occurring enzyme in malt that cleaves off sections of long chain carbohydrates, turning them into smaller, more digestible sugars that yeast can ferment. In this rum porter Captain Amylase had his work cut out for him, as it’s one big, malty brew, and the plethora of long chain carbohydrates he has swashbuckingly broken down for your drinking pleasure. The rum is our touch – the captain had nothing to do with that.
Almost black, slightly beige foam.
Sweet, roasty, aniseed aroma, notes of dark chocolate, coffee, vanilla and a dash of rum.
Rich, roasty and full-bodied with an upfront liquorice character. It finishes dry with a pleasant, lingering flavour.
Molasses and dark rum.
